* Oops! I left about three bites in this morning's oatmeal pancake before deciding to take a picture. A little burnt this morning, but today's flavor was peaches and cream. Tasty!
Tis the season to be thinking about a healthy lifestyle, amiright? Not that I'm really doing ALL that well at it, I have become quite fond of the following recipe, which maybe I made up, maybe I dreamt of, or perhaps I stole from someone-- I don't remember. Regardless, I really like it and feel the need to share it with all of my (four) faithful readers :) It's super simple, and full of tasty fiber and protein. Yum! Keeps me full until lunch, and I'm NEVER full... sooo, here it goes!
Ingredients:
* One package of instant oatmeal (I'd image you could use Quaker Oats, or another variety, depending you your preference)
- please note: I commonly change my flavor of oatmeal, as it changes the taste. Perhaps I'll list a couple variations at the end.
* Two egg whites (one might do? but I've become accustomed to using two)
* At least 2 tablespoons of water
- this is where it gets a bit tricky. There is no foolproof method to the water. The first time I made this, I used no water, and got a bit of a cardboard taste. I find that 2 tablespoons works well, but the more water you use, the runnier it will be.
Directions (pay close attention-- this is VERY tricky ;P):
Mix ingredients in a small bowl. I generally take the dogs out and let the ingredients sit for a few minutes. It makes me feel like it might be softening the oats a bit. Heat skillet to Med or Med High. Pour ingredients into skillet and cook on both sides (like a pancake). Eat and enjoy!
Sidenotes:
* I use no butter or syrup when making this-- plain and simple is my way, and I really enjoy it.
* When using more traditional flavors (or if you just want a bit more flavor, in general) I've been known to use cinnamon and/or Truvia (or another sugar substitute of your choice)
* Oatmeal flavors I've tested (and approved) include: Peaches and Cream, Strawberries and Cream, Banana Bread, Maple and Brown Sugar, and Original.
- If you're going to use original, or Quaker Oats, etc, I highly advise adding cinnamon and sugar to it, just for a bit of flavor.
The end result:
This will make one oatmeal pancake, which is light and fluffy from the egg whites (and packed with protein). Flavorful and filling, and one of my newest breakfast obsessions. Mmmmmm.
